Spaghetti Squash

Prep time: 15 minutes
Cook time: 1 hour 10 minutes
1 Serving = 6 ounces (weight)

Ingredients:

  • 1 (3 pound) spaghetti squash
  • 2 Tbsp olive oil
  • ½ large onion, chopped
  • 1 bell pepper, chopped
  • 1 bunch fresh asparagus spears, ends trimmed
  • 4 garlic cloves, coarsely chopped
  • Salt and pepper to taste

Directions:

  1. PREHEAT oven to 350°F.
  2. Pierce squash all around with a knife or fork. Microwave on high for 5 minutes, turn squash over and microwave for additional 5 minutes. 
  3. Remove from microwave and wrap squash in aluminum foil.
  4. Cook in oven for 1 hour or until shell is soft to the touch.
  5. Cut down the middle lengthwise, open squash and remove seeds. Remove strands of squash with a fork and sauté in pan with onion, pepper, and garlic.
