Spaghetti Squash

Cook time: 1 hour 10 minutes

Ingredients:

1 (3 pound) spaghetti squash
- 2 Tbsp olive oil
- ½ large onion, chopped
- 1 bell pepper, chopped
- 1 bunch fresh asparagus spears, ends trimmed
- 4 garlic cloves, coarsely chopped
- Salt and pepper to taste
Directions:
- PREHEAT oven to 350°F.
- Pierce squash all around with a knife or fork. Microwave on high for 5 minutes, turn squash over and microwave for additional 5 minutes.
- Remove from microwave and wrap squash in aluminum foil.
- Cook in oven for 1 hour or until shell is soft to the touch.
- Cut down the middle lengthwise, open squash and remove seeds. Remove strands of squash with a fork and sauté in pan with onion, pepper, and garlic.
