Brown Rice and Beans

Prep time: 5 minutes        
Cook time: 45 minutes
1 Serving = 1 ¼ cup prepared

Ingredients:

  • 1 cup brown rice, dry
  • 1 bouillon cube
  • ½ small onion chopped
  • ½ cup red bell pepper, chopped
  • 1 tsp olive oil
  • 1 cup canned red kidney beans, liquid discarded and rinsed

Directions:

  1. HEAT a medium sized saucepan with olive oil on medium until warm. ADD onion and bell pepper, sauté for 5 minutes or until soft.
  2. ADD bouillon cube and 2 cups boiling water. Continue to cook on low heat for approx 20-25 minutes.
  3. ADD beans to rice and continue to cook on low heat for additional 20 minutes or until water is absorbed. 

TIP: Be sure to stir your rice in beans every 8 minutes or so it does not stick to the pan.
