Greek Panini

Makes 1 sandwich

Ingredients:

  • 2 slices whole wheat Italian bread
  • 1 tablespoon Kalamata olive tapanade
  • 1 artichoke heart, canned in brine
  • 1 ounce feta cheese
  • 3 slices roma tomato

Directions:

  1. Spread the tapanade on one side of each slice.
  2. On one slice of bread layer ingredients in the following order, feta cheese, tomatoes, artichoke heart, top with bread slice.
  3. Heat a Panini press and follow manufactures’ instructions. If using a grill pan, preheat to medium heat. Add the sandwich; press with heavy pan to weigh down sandwich. Cook until golden brown; 3 to 4 minutes per side.
