Faux "Mashed Potato" - Mashed Cauliflower

Prep time: 5 minutes
Cook time: 20 minutes
1 Serving = 1 cup

Ingredients:

  • 1 large cauliflower head
  • 4 cloves of garlic
  • Salt and pepper to taste
  • 2 Tbsp fresh parsley, chopped
  • 2 Tbsp scallions, chopped
  • ¼ cup grated Parmesan cheese   

Directions:

  1. WASH and cut cauliflower into florets and stems. Steam cauliflower and garlic until cauliflower falls apart when pierced with a fork, about 15 minutes.
  2. BLEND cauliflower ingredients using a food processor or hand blender until smooth. Mix in salt and pepper to taste.
  3. POUR into baking dish and top with grated Parmesan cheese. Broil top until crusty brown. 
  4. TOP with parsley and scallions if desired.
